A new sushi bar in my fief...

There was no crowd, but they had just opened tonight.

The place is pleasant, the food is fresh, the staff very kind and the menu
is classic, but their prices are competitive in this area.

[The restaurant also provides home delivery].

Many bars in the Oberkampf area are equipped with huge
tv-screens
. Tonight, the Brazilian team had had it against
the Cote d'Ivoire...

It's cold, rainy and windy... how to cope ?

Well, either you take the next flight to Bali...
or you take some brown rice OR bavette and
some frozen porcini mushrooms.
You mix them together in a pot and you stir...


or +
... you stir until you get this :


which is delicious but requires
half an hour,

which demands a shorter time and, holy c@tness, is maybe too good !
Now you'll probably forget the bad weather.

Perfect moment for Brasato & Polenta...

or wine braised beef and polenta for a promising end of the year's dinner.

How to - following G@tto's suggestions...
Meat :
* you need a piece of stewing beef, previously marinated (all night long) in red
wine, with chopped leek, carrot and parsley;

* keep aside the marinade, roll the meat in some flour and brown it in hot olive
oil
with chopped chilli and garlic;
* add the marinade and sear on high heat, then add vegetable broth and some
tomato puree;
* bring to a boil, then lower the heat, cover the pot and cook for a couple of hours.
Polenta :
* Pour slowly 250 gr of coarse-grain polenta into 1 L of salted water, stirring
continuously;
* transfer all in an oven pot covered with aluminium paper to complete the cooking.
The polenta is ready when thick and creamy.

G@tto's Foamy Espresso Coffee recipe

Griset...
Best Coffee Spot in Paris




















1 - A good, basic, coffee machine,
2 - Top branded arabica coffe (Illy, Musetti, Vergnano, Segafredo...),
3 - Water,
4 - Fine granulated sugar,
5 - Coffee cups & coffe spoons,
6 - Milk cream.

Directions :
Put sugar in a cup, add first coffee drops from the machine
and stir* until you whisk it up white, then add the rest of coffe
and a hint of cream.
Light up a cigar/ette and relax...

* You may need a little training to obtain the right density... hi hi !

Coffea arabica is a species of coffee indigenous
to
Ethiopia. It is also known as the "coffee shrub
of Arabia", "mountain coffee" or "arabica coffee".

Coffea arabica
is believed to be the first species
of coffee to be cultivated, being grown in southwest
Arabia for well over 1,000 years.
It is considered to produce better coffee than the
other major commercially grown coffee species
(robusta).

The Singapore Sling, a Tiger's Taste


The Singapore Sling is both :
- a cocktail that was invented by Ngiam
Tong Boon
for the
Raffles Hotel in Singapore
sometime between 1910 and 1915
- and a movie directed and written by Nikos
Nikolaidis
(programmed by arte
on thursday may 17th).

At one point the recipe fell into disuse and was
forgotten
by the bar staff.
The recipe currently used by the hotel was
the result
of recreating the original recipe based
on the memories
of former bartenders and some
written notes that they
were able to discover.


The original recipe used at the Raffles Hotel does not
include club soda.

The Singapore Sling is available on all Singapore
Airlines flights, and the drink is free on all classes
of travel.





A premixed Singapore Sling at Raffles Hotel,
Singapore
costs S$ 19.80 (including a 10%
service charge, as of
September 17, 2006).

The freshly made orginal is the best - make
sure to ask
the bartender to mix it for you.
